Snack Platter with Chunky Olive Tapenade (Ingredients based on GM Phase – Adaptable to all phase)
Thai Chicken Parcel on Braai
(Recipe based on GM Phase – Can be adapted to suit phase)
Ingredients:
Non-stick cooking
spray
120g Chicken breast(s),skinless
5ml Lemon juice
5ml Soy sauce light
(salt-reduced)
pinch Garlic, minced
pinch Thai seasoning
150g Assortment of vegetables: Baby Marrows, Green peppers, Mange tout, Chillies Green, Spinach beans. Red onion Mushrooms, Fennel Carrots, Cabbage
Method
1. Prepare the braai.
2. Slice the vegetables in julienne strips.
3. Apply non-stick cooking spray onto a 40cm × 40cm piece of tinfoil.
4. Place the chicken in a plastic bag and flatten with a rolling pin.
5. Place a chicken breast in the center of the foil and the sliced vegetables on top of the
chicken.
6. Add the lemon juice, soy sauce and spices.
7. Wrap up each parcel.
8. Place on the braai for approximately 30 to 45 minutes or until done.
Serving Tip: On MN, add a dash of garlic- flavoured avocado oil and the pulp of one
granadilla.
Commercial Thai seasoning is usually a spicy blend of basil, thyme, chilli and
other spices that exude a distinctive Thai flavour.
Roast this parcel in the oven at 180ºC for 20 minutes until cooked.
Creamy berry peach Delight (Adjust quantities according to phase allowance)
Ingredients
200g Frozen Berry Mix (Mulberries, strawberries,
raspberries, blackberries, blueberries)
300ml Clear, Sugar free fizzy drink e.g.. sprite zero
2ml SW or other sweetener to taste (optional)
200g Dessert peaches (Or cling peaches / white peaches) 500ml Plain fat free yoghurt
Method
Day 1
Drain the fat-free yoghurt overnight, using a coffee filter or muslin cloth.
Prepare the Frozen Berry Mix (directions below)
Place a clean, empty baking tray or other dish with a large, flat base in the freezer.
Day 2
Blend the frozen berries and sugar-free drink in a food processor until smooth. Place the berry mixture on the very cold baking sheet and return to the freezer.
Cool the serving glasses down in the freezer.
Preheat the oven grill. Sprinkle the cut side of the peach half with the sweetener. Grill until slightly caramelized.
Scrape the frozen berry mixture with a fork to loosen the ice crystals and form slush (similar to a sorbet consistency).
Layer the ingredients as follows in the serving glass: slush, yoghurt and grilled peach.
Garnish with mint. Serve immediately.
Frozen Berry Mix
Gently rinse, dry and hull the berries. Leave small berries whole and cut the larger berries into halves or quarters. Weigh to yield the desired serving size(s).
Spray a non-stick baking sheet with non-stick cooking spray or line with parchment paper. Spread the berries on the baking sheet in a single layer, not touching one another. Sprinkle with sweetener. Freeze the fruit, uncovered, for 2 hours. This step ensures that the berries will remain separate once frozen.
Transfer the frozen berries to containers or heavy, plastic bags suitable for the freezer. Label and date the bags or containers.
Store the frozen berries in the freezer for up to 6 months.
